A simple and healthy recipe using millet that kids will enjoy:

Millet Veggie Patties

Ingredients:

  • 1 cup cooked SAARAL Foxtail millets
  • 1/2 cup grated carrots
  • 1/2 cup grated zucchini
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup bread crumbs (plus extra for coating)
  • 1 egg, beaten (you can also use a flax egg for an egg-free version)
  • 2 tablespoons olive oil (for frying)

Instructions:

  1. In a large mixing bowl, combine the cooked millet, grated carrots, grated zucchini, chopped onion, chopped bell pepper, parsley, garlic powder, dried oregano, salt, black pepper, bread crumbs, and beaten egg. Mix well until all the ingredients are evenly combined.

  2. Form the mixture into patties. Take a handful of the mixture and shape it into a patty about 1/2 inch thick. Repeat with the remaining mixture. You should get around 6-8 patties depending on the size.

  3. Pour some extra bread crumbs onto a plate. Coat each patty with bread crumbs, pressing gently to adhere them to the surface.

  4. Heat olive oil in a non-stick skillet over medium heat. Place the patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and crispy. You may need to cook them in batches, depending on the size of your skillet.

  5. Once cooked, transfer the patties to a paper towel-lined plate to drain any excess oil.

  6. Serve the millet veggie patties warm with a side of salad or as a burger patty in a whole wheat bun. You can also serve them with a dipping sauce like ketchup or a yogurt-based sauce.
